We are green smoothie mad in our house at the moment. Steve and I have been having two green smoothies a day most days and Elise has been enjoying them too. A little sip here – a whole glass there, and then half the blender jug there! It makes me delight in seeing her with smoothie all over her face, knowing what super nutrition she is getting packed into that glass.
The Mango Lime Coconut one is Steve and my favourite. We just can’t get enough of it. Don’t skip the lime juice – this is what really makes it! The collard greens or spinach give the smoothie a wonderful vibrant green colour when mixed with the mango. Chard still works well in terms of taste but if I have collard greens or spinach I go for them first in this recipe. If you are able to soak the chia seeds for several hours or overnight they will be more nutritious.
Mango Lime Coconut Green Smoothie
Half a bunch of collard greens (or half a large bunch of spinach or green chard)
Juice of 1 lime
1-2 TB Chia Seeds (optional)
Water and/or coconut water (about 1 1/2 to 2 cups)
1 mango, peeled and chopped
Young thai coconut meat (of one) or 1 teaspoon coconut oil
Whizz the collard greens with the lime juice, chia seeds and water in a blender. Add the mango (and coconut meat if using or coconut oil) and whizz until smooth. Add the bananas and whizz, stopping and starting a few times. Enjoy!
