Elise loves this pudding – a healthy version of ice cream! This pudding is packed with Tahini – pureed sesame seeds. Sesame seeds a very good source of manganese and copper, a good source of calcium, magnesium, iron, phosphorus, vitamin B1, zinc and dietary fiber. They also an help reduce blood pressure, improve vitamin E absorption and protect the liver from oxidative damage. If you don’t have Tahini you could use Peanut Butter or Almond Butter.
1 Frozen Banana
2 Heaped Tablespoons Tahini, Peanut Butter or Almond Butter
1 Scant Teaspoon Honey
Slice the banana and add to a small blender (I use the chopper part of my Braun MultiQuik). Add the Tahini and honey. Whizz altogether until smooth. You may need to start with short pulses first until the banana is softened. Serve.
